  1. Preheat oven to 375 degrees. Grease a 2.5 quart baking dish.
  2. Combine the puree with the ricotta, milk, salt, and nutmeg in a food processor. Blend until smooth and creamy.
  3. In a separate bowl, mix your spinach, ricotta, mozzarella, garlic, salt, and pepper.
  4. Cook your noodles according to package instructions, then rinse them with cold water.
  5. Spread 1/3 of your squash mixture on the bottom of your dish. Sprinkle with some mozz. Top that with a layer of noodles to completely cover.
  6. Spread the noodles with half of your spinach filling. Top that with a little more mozz and your next layer of noodles.
  7. Spread another third of your squash mixture onto the noodles with a little more mozz.
  8. Add another layer of noodles and the rest of the spinach. Sprinkle with some mozzarella.
  9. Top with the final layer of noodles and the rest of the squash mixture. Finish it off with the rest of the cheeses, thyme, paprika, and pepper.
  10. Cover and bake about 30 minutes at 375. Remove the foil and bake another 10.
